1141. Chocolate Courgette Sheet Cake


There must be something in the air demanding chocolate cake! Come to think about it, isn't there always something in the air demanding chocolate cake? In any case, I am a late comer to the trend-turned-classic courgette chocolate cake. I'm not sure if this is an American thing, or they simply popularized it, but oh my this is moist to a crazy level.
Baked as a sheet cake, dressing it up with chocolate glaze, whipped cream, and raspberries was something completely superfluous. Dressed up, it sits gorgeously on the table waiting to be devoured by guests. Dressed down, ie, plain, it makes for the perfect cake for breakfast.


Ingredients: serves 12

2 1/2 cups flour
1/2 cup cocoa
2 tsp baking soda
1/2 tsp salt
2 eggs
2 cups sugar
1 cup oil
1/2 cup plain yogurt
2 tsp vanilla
1/2 cup boiling water
2 cups grated courgettes

Glaze and topping:
350g chopped semi-sweet chocolate
3/4 cup boiling water
1 1/2 cups heavy cream, whipped
Fresh raspberries


Method:

Preheat oven to 350F.  Line a large 12 x 18-inch baking tray with parchment; set aside.
In a large bowl sift together flour, cocoa, baking soda and salt.  Set aside.
In the bowl of a stand up mixer beat eggs,  With the mixer running, slowly add sugar and mix until light yellow in color. Slowly add oil, yogurt and vanilla.  Mix until smooth and light in color.  Beat in flour and cocoa mixture until smooth.  Fold in grated courgettes then boiling water.
Pour batter into prepared baking tray and bake for 25 minutes in preheated oven until cake springs back when lightly touched.  Remove from oven and cool completely.
Trim the edges off the cake then cut the sheet cake into 12 large squares. Spread a heaping tablespoon full of glaze over each cake.  Spread until the glaze starts to drip over the edges of cakes.  Allow glaze to harden for 20-30 minutes. Add a dollop of whipped cream over each glazed slice and garnish with fresh raspberries.  Refrigerate until ready to serve.

To prepare the glaze:
Place chopped chocolate in the top of a double boiler that is sitting over simmering water.  Stir until chocolate is melted.  Immediately add the boiling water all at once.  Stir until smooth.
