1031. Cucumber Pomegranate Salad


This has to be one of the simplest and freshest salads out there. Cucumber is often used as an accessory to our salads, so making it the main even is quite the surprise. Cucumber rings are simply topped with fresh pomegranate seeds and crumbles of fresh plain white farmer's cheese (can switch for feta or even goat's).
A simple balsamic vinaigrette is poured just before serving, and even this can be further simplified by opting out and using lemon juice and olive oil.


Ingredients:

6 small cucumbers
1/2 cup fresh white cheese
1/2 cup pomegranate seeds

For the dressing:
1 tsp dojon mustard
1 tsp honey
1 Tbsp balsamic vinegar
4 Tbsp olive oil


Method:

Slice the cucumber into 2 millimeter rounds and arrange slightly overlapping into the flat serving dish. Top with the crumbled white cheese and pomegranate seeds. Drizzle with the dressing just before serving.
To make the dressing, whisk the dijon, honey, balsamic, and olive oil until emulsified..
