506. Freekeh Dill Pepita Salad


I invented this salad because I felt like I needed a loaded, health-boosting, feel-good salad.

This is the bomb of health. It is hearty, filling, satisfying, and can be eaten for lunch by itself.
Some healthy-wealthy ingredients it includes are: sunflower seeds, pumpkin seeds (pepitas), fresh and dry herbs, sultanas, and preserved limes, among others. Not forgetting the superfood freekeh itself.
Freekeh, done here before both as a herb salad and as a pilaf dish, is an ancient Babylonian wheat grain, picked while still green, and smoked for unbelievable flavor.

Ingredients:

2 cups freekeh*
1 cup feta cheese, cubed
1 1/2 Tbsp dry mint, crushed
3/4 cup fresh dill, chopped
3 preserved limes, chopped
1 spring onion, sliced
1/2 cup sultanas
1/4 cup sunflower seeds
1/4 cup pepitas
2 lemons, juice
1/2 cup olive oil
1 tsp salt

*made from 3/4 cup uncooked freekeh



Method:

Combine all the ingredients together, tossing gently.
Store covered in the refrigerator.
Lasts refrigerated up to a week (maybe a few days more).
