471. Salami and Marinated Feta Foccacia Sandwich


Lately, pressed sandwiches are my favorite thing to look forward to in the day.
Paired with the perfect bread, they are unbeatable.

In comes the perfect home-made focaccia. A little crisp, a little soft, and a whole lot of perfectly textured holey bread.
I also felt like using some of my lovely marinated feta cheese. Some meaty salami, and peppery rocket leaves, this sandwich was a snack bomb worth looking forward to.
I'm thinking some shredded chicken next time...


Ingredients:

1 loaf focaccia
salami slices
marinated feta
rocket leaves


Method:

Slice the focaccia horizontally in half.
Arrange salami slices on one half, and smear some marinated feta on the other side.
Top generously with fresh, crisp rocket leaves.
Invert top back on the sandwich to seal.
Cover in plastic wrap, and refrigerate at least 4 hours or overnight with a heavy weight on top.
To serve, cut the square foccacia in half, then each half in three, yielding six rectangular sandwiches.
