354. Flour Frosting


When I first came across this recipe, I had to double check if I read the title correctly.

Flour frosting, that's right. I would even venture to say that it is better than traditional buttercream frosting.
It is creamy and sweet, as a frosting should be, but not overly so, and at a cheaper calorific cost.
Win-Win.
Secret recipe it is indeed, obtained from the wonderful Chocolate & Chilies.
I do believe this will be my go-to frosting of choice.
Note that although the ingredients might appear to be scant, this recipe generously coated an entire regular full-sized cake. Whipping is key.



Ingredients:

3 Tbsp flour
1/2 cup milk
1/2 cup butter, softened
1/2 cup sugar
1/2 tsp vanilla


Method:

In a small saucepan, whisk together the flour and milk.
On medium heat, whisk continuously until it starts to thicken.
Continue to cook until it is thick like pudding.
Push through a stainer and allow to cool.

In the bowl of a stand mixer fitted with the whisk attachment, beat together the butter and sugar until fluffy.
While beating add the flour and milk mixture and the vanilla.
Beat on high for at least 7 minutes until the frosting is fluffy.
If it is not coming together just keep beating until it does.
Pipe or spread as desired!
