310. Overnight Muesli Oats


There is something about January that makes me want oats in some form or another.
Although I have posted oatmeal cookies, muesli, and muesli bars, I've known this overnight muesli recipe the longest. It is by Jamie Oliver, and he named it pukkola, based on his favorite word pukka, which I suppose is the equivalent of fantastic. And fantastic it is. The overnight soaking makes the oats wonderfully thick and gooey, and even slightly dissolves the dried fruit to develop a wonderful sweetness regardless of the absence of sugar.
The dry mix (just minus the apples and milk) can be stored in an air-tight container for months. The night before serving, place the required amount in a bowl, pour enough milk to cover, place in the refrigerator. Just before serving, grate some apple and mix it in the oatmeal.
This is perfect for people who don't like hot milk, and is nutritious and satisfying.



Ingredients:

8 large handfuls of organic rolled oats
2 large handfuls of ground bran
1 handful of chopped dried cranberries
1 handful of chopped dried dates
2 handful of crumbled brazil nuts
1 litre milk (or soya/almond/oat milk) to cover
3 apples, washed and unpeeled




Method:

Put oats and bran into a large tupperware with cranberry, dates and any other soft fruit.
Add the brazil nuts, and any other nuts and seeds.
This mixture will keep for up to two months in an airtight container.

The night before you want to eat your pukkolla, put two portions of the oat mixture into a bowl and cover with the milk, grate in half an apple per person and stir immediately to keep apple from discolouring.
Place in the fridge overnight.

When you’re ready to eat it, slice or mash half a banana per person, stir into the soggy oats and add honey to taste. Serve with a dollop of yogurt and some fresh mixed berries.
