233. Potato Tray Bake


Potatoes are such a versatile tuber.
These tray-baked potatoes rival the best packaged crisps or frozen fries.
I flavored them simply with salt, freshly ground pepper, and powdered garlic.

But really you can put almost anything you like, from herbs (rosemary, thyme, sage...), to spices (paprika, chili, curry...), or even cheese (Parmesan, Gruyere...), and fresh garlic or onion.



Ingredients:

2 large potatoes
1 Tbsp olive oil
2 Tbsp butter
salt & pepper
garlic powder



Method:

Preheat oven to 400F.
Wash, scrub, and dry potatoes.
Slice thinly and uniformly using a mandolin if possible.
Line a large rimmed baking sheet with parchment paper or baking silicone sheet.
Rub the olive oil over the base of the baking sheet and season lightly with a sprinkling of salt.
Arrange the potato slices slightly overlapping over the entire surface.
Sprinkle over the salt, pepper, and garlic powder.
Dot with butter.
Bake for 45 minutes to 1 hour, until crispy on the edges and cooked all through.
You may broil if you want, but the bottom side will the a deep golden brown without additional browning.
