166. Pear Walnut Blue Cheese Pizza


This combination is what I have been looking for, but I just didn't know it! It is genius I tell you, and I wouldn't change a thing about it!
I picked it up from The English Kitchen, and just had to share it.
Sweetness of the pears, saltiness and tanginess of the blue cheese, earthy nuttiness from the walnuts, all enveloped in the cheesy gooiness of the mozzarella on a pizza base! But that's not all: microwave some honey and sage to drizzle on top, and you really cannot stop at just one.
The only thing I can think of is that maybe next time I'll be trying this on a whole wheat pizza base, to further complement the "earthiness" of the flavors.


Ingredients:

For the dough: (this is the pastry cone recipe, halved)
1 cup flour
1 tsp yeast
1/4 tsp salt
1/4 tsp baking powder
1 tsp powder milk
1 Tbsp oil
1/3 cup warm water (maybe a few Tbsp extra)

For the topping:
1/2 cup blue cheese, crumbled
1/2 cup mozzarella cheese, grated
1/2 cup chopped walnuts
2 medium pear, peeled, cored and coarsely chopped

For the Sage honey:
2 Tbsp honey
1 tsp chopped sage leaves



Method:

Prepare the pizza dough:
Sift the flour, salt, baking powder, milk powder in a bowl.
Whisk the yeast in the water and oil.
Pour the yeast mixture on the flour mixture and knead for 3-4 minutes.
Form dough into a ball, lightly oil, cover, allow to rise 45 minutes in a warm place.
Divide dough into four, and pat into pizza discs (not too thin, not too thick) on a non-stick baking sheet, set aside.

Preheat oven to 400°F.
Mix the pear, cheeses, and walnut together.
Divide amongst the four pizza bases
Bake for 15 minutes until golden and crispy.

Mix the honey and the sage in a microwave-safe bowl.
Microwave for about 30 to 40 seconds until bubbly and fragrant.
Drizzle on the pizza and serve immediately.
